Today I learned how to make homemade potato pancakes.

I used the old family recipe, utilized for a meal of one (with lots of leftovers).

3-4 potatoes, shredded to about 2 cups.
1/4 milk
1 egg
salt, pepper to taste
2 tbsp flour
1 onion, minced

Shred potatoes into bowl of milk. Drain milk. Add onion, egg and flour. Add by the spoonful to greased skillet. Hopefully I didn’t miss anything, since I don’t keep my recipes at the office. :-)

I dipped a couple in sour cream and one in apple sauce (my favorite).

It went great with a summer squash and zucchini casserole dish.
